Warm Potato & Feta Salad with French Vinaigrette

Add a new dimension to your potatoes with some our French dressing and a little cheese

What You'll Need

  • 1kg red pontiac potatoes
  • olive oil
  • 2 celery stalks, sliced
  • 2 spring onions, finely sliced
  • ¼ cup chopped parsley
  • ½ cup Praise Deli Style French Vinaigrette
  • 200g feta

What to Do

  1. Place potatoes in a large pot and cover with cold water and a tablespoon of salt. Bring to the boil and then turn down heat and simmer for 15-20 minutes or until a knifepoint passes through without pressure. Drain and cut into halves or quarters for larger potatoes.
  2. Toss potatoes in a bowl with celery, spring onions, parsley and vinaigrette and season with salt and pepper. Top with crumbled feta.
