Tuna Salad with Avocado, Bacon and Chipotle Aioli


What You'll Need

  • 400g tin tuna in brine, drained
  • 4 rashers of thick short cut bacon, diced
  • 200g baby spinach
  • 2 ripe avocados, diced
  • 1 small red capsicum, diced
  • 2 spring onions, sliced
  • ½ cup coriander leaves
  • 1 lime
  • ½ cup Praise Deli Style Chipotle Aioli

What to Do

  1. Pan fry the diced bacon until crispy.
  2. Gently toss together the baby spinach, diced avocado, capsicum, spring onion and coriander. Make a dressing with lime juice, half of the chipotle aioli and salt and pepper then toss through salad.
  3. Add diced bacon and toss again before breaking tuna into chunks and topping salad. To serve, drizzle over remaining aioli.
