Tuna Salad with Avocado, Bacon and Chipotle Aioli
What You'll Need
tuna in brine, drained
of thick short cut bacon, diced
ripe avocados, diced
small red capsicum, diced
spring onions, sliced

What to Do
Pan fry the diced bacon until crispy.
Gently toss together the baby spinach, diced avocado, capsicum, spring onion and coriander. Make a dressing with lime juice, half of the chipotle aioli and salt and pepper then toss through salad.
Add diced bacon and toss again before breaking tuna into chunks and topping salad. To serve, drizzle over remaining aioli.
