Spiced Fish Wraps

What You'll Need

  • 2 continental cucumbers, cut into ribbons
  • 2 limes, finely zested & juiced
  • 1 red chilli, finely diced
  • 2 tbsp flour
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 800g fresh white fish, cut into large cubes
  • 1 tbsp olive oil
  • ½ cup parsley, finely chopped
  • ½ cup dill, finely chopped
  • 1 cup Praise Whole Egg Mayonnaise
  • 8 Helga‚Äôs Mixed Grain Wraps
  • 8 lettuce leaves (like Oakleaf)
  • Lime for serving

What to Do

  1. Toss the cucumber ribbons with lime juice and chilli in a bowl and season. Set aside to pickle.
  2. Place the flour, paprika, cumin and zest of 1 lime in a bowl and season. Pat the fish dry with paper towel and toss in the flour mix.
  3. Heat BBQ grill or a char-grill pan over high heat with the olive oil. Cook the fish, turning once for approximately 8 minutes or until golden and just cooked through.
  4. Quickly toast the wraps on the BBQ, turning once until warm.
  5. Toss the parsley and dill through the cucumber mix.
  6. Top the wraps with the lettuce, fish, cucumber mix and a good dollop of Praise Whole Mayonnaise mix.
