This rich frittata is made with our mayonnaise and filled with smoked salmon, vegetables and risoni pasta
What You'll Need
1cup risoni pasta
olive oil spray
6eggs
½cup Praise Whole Egg Mayonnaise with Olive Oil
200gsmoked salmon slices, chopped into strips
½cup peas
½cup red capsicum, diced
2tbsp chopped chives
1tbsp lemon zest
What to Do
Cook the risoni in salted boiling water until tender. Drain and cool.
Pre heat oven to 180°C. Spray 20 x 30cm baking dish with olive oil, line base and sides with baking paper.
In a large bowl, whisk eggs and mayonnaise until combined then fold in cooked risoni, smoked salmon, peas, capsicum, chives, lemon zest and season with salt and pepper. Pour mixture into prepared baking dish and bake in oven for 30-40 minutes or until firm and golden brown.
Remove from oven and leave to stand in baking dish for 10 minutes before serving. Serve with garden salad and an extra dollop of mayonnaise.
