Add some flavour to your winter roast pumpkin with our French dressing, feta and herbs
Praise Tip: If you can’t get lemon thyme use standard thyme and 1tsp grated lemon rind to roast.
What You'll Need
1small pumpkin (kent or jap are ideal), deseeded and cut into wedges
4cloves garlic, skin on
olive oil spray
¼tsp smoked paprika
½cup sage leaves
1tbsp lemon thyme leaves
¼cup Praise French Dressing
What to Do
Pre heat oven to 180°C.
Line a baking tray or shallow roasting dish with baking paper and spray with olive oil. Add pumpkin wedges on their side, garlic cloves and sage leaves. Season with salt, pepper and smoked paprika. Roast for 15 minutes then flip each wedge to roast for a further 15 minutes.
To serve, spoon French Dressing over each piece of pumpkin, crumble feta over and sprinkle fresh lemon thyme.
