Pulled chicken rolls with pickled apple and cabbage slaw
What You'll Need
apple cider vinegar
chicken stock (or water)
roasted chicken, meat removed and shredded with a fork
Granny Smith apple, peeled and cut into matchsticks
small red cabbage, shredded
spring onions, finely sliced

sea salt and fresh ground black pepper
What to Do
Combine the cumin, chilli, ¼ cup apple cider vinegar, stock and BBQ sauce in a saucepan. Bring to the boil then remove from heat. Pour over shredded chicken and combine.
Combine sugar, remaining apple cider vinegar and lemon juice in a bowl until dissolved. Add apple matchsticks and marinate for 10 minutes.
Separately combine cabbage, spring onion and aioli then season with salt and pepper. Drain and add pickled apples.
Toast buns under the grill. Top with pulled chicken and apple slaw then serve.
