PRAWN, ZUCCHINI & CHERRY TOMATO BBQ SKEWERS


What You'll Need

  • 1/4 cup olive oil
  • 1/2 cup lemon juice
  • 1/2 red chilli, deseeded and finely chopped
  • 1/4 cup parsley leaves, finely chopped
  • 24 large raw tiger prawns, peeled and deveined
  • 2 zucchinis, sliced into 24 thick rounds
  • 24 cherry tomatoes
  • Praise Deli Style Lemon Aioli

What to Do

  1. Whisk together olive oil, lemon juice, chilli and parsley.
  2. Skewer 2 prawns, 2 zucchini rounds and 2 cherry tomatoes on each skewer and lay flat on a tray. Pour marinade over the skewers and refrigerate for 30 minutes.
  3. Grill skewers on high for 2-3 minutes per side and drizzle over lemon aioli.
  4. Serve with salad and rice.
