PRAWN, ZUCCHINI & CHERRY TOMATO BBQ SKEWERS
What You'll Need
red chilli, deseeded and finely chopped
parsley leaves, finely chopped
large raw tiger prawns, peeled and deveined
zucchinis, sliced into 24 thick rounds

What to Do
Whisk together olive oil, lemon juice, chilli and parsley.
Skewer 2 prawns, 2 zucchini rounds and 2 cherry tomatoes on each skewer and lay flat on a tray. Pour marinade over the skewers and refrigerate for 30 minutes.
Grill skewers on high for 2-3 minutes per side and drizzle over lemon aioli.
Serve with salad and rice.
