Prawn & Chorizo Caesar Salad

Spanish chorizo and creamy avocado give this Caesar something extra

What You'll Need

  • 1 cos lettuce, washed and roughly chopped
  • 12-16 large cooked tiger prawns, shelled and deveined
  • 1 cup croutons
  • 1 large avocado, cubed
  • ¼ small Spanish onion, finely sliced
  • 4 eggs, hard boiled and quartered
  • olive oil
  • 1 chorizo, sliced
  • ½ cup Praise Caesar Dressing

What to Do

  1. Add cos lettuce, prawns, croutons, avocado, Spanish onion and hard-boiled eggs to a large bowl without mixing.
  2. Heat olive oil in a fry pan and gently sautée sliced chorizo until browned and crispy. Remove pan from heat and add chorizo to salad. Retain chorizo oil and allow to cool for 5 minutes.
  3. In a small bowl, whisk together the Caesar Dressing with the chorizo oil. Drizzle over salad and toss all ingredients together and serve.
