Prawn & Chorizo Caesar Salad
Spanish chorizo and creamy avocado give this Caesar something extra
What You'll Need
cos lettuce, washed and roughly chopped
large cooked tiger prawns, shelled and deveined
large avocado, cubed
small Spanish onion, finely sliced
eggs, hard boiled and quartered

What to Do
Add cos lettuce, prawns, croutons, avocado, Spanish onion and hard-boiled eggs to a large bowl without mixing.
Heat olive oil in a fry pan and gently sautée sliced chorizo until browned and crispy. Remove pan from heat and add chorizo to salad. Retain chorizo oil and allow to cool for 5 minutes.
In a small bowl, whisk together the Caesar Dressing with the chorizo oil. Drizzle over salad and toss all ingredients together and serve.
