Prawn, Avocado & Potato Salad with Dijonnaise

What You'll Need

  • 2 large avocados, cut into large chunks
  • ½ cup Praise Deli Style Dijonnaise
  • ½ lemon, juiced
  • 12 baby potatoes, cooked whole, cooled and quartered
  • 24 king prawns, peeled
  • 200g rocket leaves
  • 3 radishes, thinly sliced
  • 2 tbsp chives, chopped
  • 1 tbsp dill, chopped

What to Do

  1. Mash half an avocado with the dijonnaise and lemon juice, seasoning with salt and pepper. Toss potatoes, remaining avocado and king prawns through dressing.
  2. Lay a bed of rocket leaves on a large plate and top with dressed prawn, avocado and potato mixture. Garnish with sliced radishes, chives and dill. Zig zag over some extra dijonnaise and serve.
