Potato Salad with Crispy Prosciutto

Give your potato salad a makeover with a sprinkle of crispy prosciutto and Praise whole egg mayonnaise (now made with Fresh Australian Free Range Eggs)


What You'll Need

  • 100g thinly sliced prosciutto
  • 1 kg evenly sized chat potatoes, halved
  • 1 bunch (¼ cup) chives, finely sliced
  • 1 cup Praise Whole Egg Mayonnaise

What to Do

  1. Preheat oven to 180°C. Lay prosciutto on a large oven tray. Bake, turning, for 20 minutes or until crisp. Drain on kitchen paper and break into pieces.
  2. Meanwhile, place potatoes in a large saucepan. Cover with cold water and bring to the boil. Boil for 15 minutes or until tender (test with a skewer). Drain and cool.
  3. Place potatoes, chives and mayonnaise in a large bowl and stir gently. Just before serving, stir through prosciutto.
