Poached Chicken Sesame Noodle Salad

Our Sesame dressing drizzled over this combination of chicken, noodles, snow-peas is hard to resist.

Tip: For extra flavour poach chicken in 50:50 mix of chicken stock and water (500mL of each).

What You'll Need

  • 2 chicken breasts
  • ¾ cup Praise Deli Style Roasted Sesame Vinaigrette
  • 3 slices fresh ginger
  • 1 bunch coriander, leaves removed (keep stems and roots)
  • 2 tbsp rice wine vinegar
  • 2 tbsp soy sauce
  • 1 red chilli, deseeded and finely sliced
  • 180g vermicelli noodles, cooked
  • 200g snow peas, sliced
  • 2 spring onions, sliced
  • toasted sesame seeds

What to Do

  1. Place ginger and coriander stems in large pot, add 4 cups cold water and chicken breasts. Bring to simmer and poach chicken for 12-15 minutes. Remove from heat and stand for a further 5 minutes before draining and thinly slicing.
  2. In a large bowl combine ½ cup of roasted sesame dressing with rice wine vinegar, soy sauce and red chilli. Toss the prepared vermicelli noodles in the dressing before arranging on a serving platter. Top with sliced snow peas, spring onions and sliced poached chicken and drizzle over remaining dressing. Garnish with toasted sesame seeds.
