Mixed Leaf Caesar salad

Cranberries, Spanish onion and mixed leaves give a twist to this classic recipe topped with our Caesar dressing and croutons

What You'll Need

  • 400g mixed salad leaves (washed and roughly chopped)
  • ½ small Spanish Onion, finely sliced
  • ¼ cup Cornwells white wine vinegar
  • juice of ½ lime
  • 1 tbsp caster sugar
  • 1 cup Praise Croutons
  • ½ cup dried cranberries
  • 1 cup Praise Fat Free Caesar Dressing
  • fresh shaved parmesan

What to Do

  1. Make a quick pickling liquid by combining the vinegar, lime juice and sugar in a small bowl.
  2. Put a small pot of water on to boil. Once boiling, blanche the sliced onion for 30 seconds. Drain immediately and cool under running cold water. Immerse in pickling liquid, chill for 20 minutes and drain.
  3. In a large bowl, toss together the mixed leaves, croutons, cranberries and Caesar Dressing. Top with the pickled Spanish onions and fresh shaved parmesan cheese.
