Cranberries, Spanish onion and mixed leaves give a twist to this classic recipe topped with our Caesar dressing and croutons
What You'll Need
400gmixed salad leaves (washed and roughly chopped)
½small Spanish Onion, finely sliced
¼ cupCornwells white wine vinegar
juice of ½lime
1 tbspcaster sugar
1 cupPraise Croutons
½ cupdried cranberries
1 cupPraise Fat Free Caesar Dressing
fresh shaved parmesan
What to Do
Make a quick pickling liquid by combining the vinegar, lime juice and sugar in a small bowl.
Put a small pot of water on to boil. Once boiling, blanche the sliced onion for 30 seconds. Drain immediately and cool under running cold water. Immerse in pickling liquid, chill for 20 minutes and drain.
In a large bowl, toss together the mixed leaves, croutons, cranberries and Caesar Dressing. Top with the pickled Spanish onions and fresh shaved parmesan cheese.
