MEXICAN GRILLED CHICKEN BURGERS WITH CORN SALSA AND LIME AIOLI


What You'll Need

  • olive oil
  • ¼ tsp ground coriander
  • ¼ tsp ground chilli
  • ½ tsp ground cumin
  • ½ tsp dried oregano
  • 1 tsp minced garlic
  • 2 chicken breasts, butterflied in half
  • sea salt and fresh ground black pepper
  • 1 lime, juice
  • 1 large corn cob
  • 1 tomato, diced
  • ¼ red onion, diced
  • ½ cup coriander leaves
  • 1 cup Praise Deli Style Classic Aioli
  • 8 small artisan bread rolls
  • 1 large avocado, peeled and mashed
  • 100g rocket leaves

What to Do

  1. Combine 2 tsp olive oil with ground coriander, chilli, cumin, oregano and garlic in a bowl. Add chicken and marinate for 20 minutes. On high, BBQ grill chicken then season with salt and pepper and ½ lime juice. Chop into pieces.
  2. BBQ corn until partially charred. Remove and cut kernels into a bowl, mixing in tomato, onion and coriander leaves. Season with salt, pepper and olive oil.
  3. Separately combine aioli with remaining lime juice.
  4. Layer each bread roll with avocado, rocket, chicken, corn salsa and lime aioli then serve.
