MEXICAN GRILLED CHICKEN BURGERS WITH CORN SALSA AND LIME AIOLI
What You'll Need
¼ tspground coriander
¼ tspground chilli
½ tspground cumin
½ tspdried oregano
1 tspminced garlic
2chicken breasts, butterflied in half
sea salt and fresh ground black pepper
1large corn cob
¼red onion, diced
½ cupcoriander leaves
1 cupPraise Deli Style Classic Aioli
8small artisan bread rolls
1large avocado, peeled and mashed
What to Do
Combine 2 tsp olive oil with ground coriander, chilli, cumin, oregano and garlic
in a bowl. Add chicken and marinate for 20 minutes. On high, BBQ grill chicken
then season with salt and pepper and ½ lime juice. Chop into pieces.
BBQ corn until partially charred. Remove and cut kernels into a bowl, mixing in
tomato, onion and coriander leaves. Season with salt, pepper and olive oil.
Separately combine aioli with remaining lime juice.
Layer each bread roll with avocado, rocket, chicken, corn salsa and lime aioli
