Lamb, feta and balsamic salad

The combination of lamb, feta and our roasted garlic and balsamic olive oil vinaigrette give this salad a Mediterranean flavour.

What You'll Need

  • 400g lamb leg steaks
  • ½ cup Praise Deli Style Balsamic & Roasted Garlic Vinaigrette
  • olive oil
  • 120g baby spinach and rocket blend
  • ½ small Spanish onion, finely sliced
  • 425g tin whole baby beetroot, quartered
  • 100g feta, crumbled
  • ½ cup walnuts, toasted and roughly chopped

What to Do

  1. Season the lamb with sea salt and pepper and lay in a dish. Pour ¼ cup balsamic roasted garlic vinaigrette over the lamb and marinate for 20 minutes.
  2. Cook lamb in frypan on medium-high for 3 minutes each side. Rest for 5 minutes before slicing.
  3. Meanwhile combine spinach, rocket, onion and beetroot on a platter or in a large bowl and drizzle with remaining vinaigrette. Add the sliced lamb and garnish with crumbled feta and chopped walnuts. Add additional vinaigrette if desired.
