The combination of lamb, feta and our roasted garlic and balsamic olive oil vinaigrette give this salad a Mediterranean flavour.
What You'll Need
400glamb leg steaks
½ cupPraise Deli Style Balsamic & Roasted Garlic Vinaigrette
120gbaby spinach and rocket blend
½small Spanish onion, finely sliced
425gtin whole baby beetroot, quartered
½ cupwalnuts, toasted and roughly chopped
What to Do
Season the lamb with sea salt and pepper and lay in a dish. Pour ¼ cup balsamic roasted garlic vinaigrette over the lamb and marinate for 20 minutes.
Cook lamb in frypan on medium-high for 3 minutes each side. Rest for 5 minutes before slicing.
Meanwhile combine spinach, rocket, onion and beetroot on a platter or in a large bowl and drizzle with remaining vinaigrette. Add the sliced lamb and garnish with crumbled feta and chopped walnuts. Add additional vinaigrette if desired.
