Grilled Haloumi Spinach & Fig Salad with Greek Dressing

Roasted figs and Spanish onions paired with our Greek dressing and pan fried haloumi make a salad that's hard to resist

What You'll Need

  • 8 figs
  • 1 Spanish onion, cut into wedges
  • 200g baby spinach leaves
  • ½ cup almond slivers, toasted
  • ¼ cup Praise Greek Dressing
  • 300g Cypriot haloumi, cut into 1cm thick slices

What to Do

  1. Preheat oven to 225°C.
  2. Arrange the fig halves face up and onion wedges on a lined baking tray and roast for 10 minutes. Remove and set aside to cool.
  3. Toss spinach, toasted almonds and onions with the Greek dressing and arrange on platter. Add grilled figs.
  4. Heat a grill or fry pan. Brush olive oil on haloumi slices. Grill on each side and drain on kitchen paper before breaking up into pieces over the salad.
