French potato and green bean salad

A lighter twist on the classic Nicoise salad, warm potatoes will make this a favourite all year round.

What You'll Need

  • ½ cup Praise Classic French Vinaigrette
  • 1kg baby chat potatoes
  • 200g green beans, top and tailed
  • 100g rocket leaves
  • 1 Spanish onion, finely sliced
  • 400g tinned cannellini beans, rinsed and drained
  • 1 cup parsley leaves, roughly chopped

What to Do

  1. Place baby potatoes in a large pot and cover with cold water. Bring to a boil then simmer for 15 minutes or until just tender. Cool and cut larger potatoes into quarters and small ones into halves.
  2. Blanche the trimmed green beans in boiling water for 1-2 minutes before draining and refreshing under cold water.
  3. In a serving bowl or platter, toss together the potatoes, green beans, rocket leaves, onion, cannellini beans, parsley and top with French vinaigrette and season to taste.
