Cucumber & Citrus Coleslaw

This summery slaw combines citrus colours and flavours with our creamy Coleslaw dressing


Praise Tip: Other seasonal citrus can be used like blood orange, mandarins, tangelos etc

What You'll Need

  • 2 telegraph cucumbers, cut lengthways and deseeded
  • ¼ red cabbage, shredded
  • 1 green capsicum, finely sliced
  • 4 spring onions, finely sliced
  • 2 oranges, segmented
  • 1 ruby grapefruit, segmented
  • 1 lime, sliced
  • 1 tsp caster sugar
  • juice of ½ orange
  • 1 cup Praise Fat Free Coleslaw Dressing

What to Do

  1. In a small bowl, dissolve the caster sugar in the orange juice and then combine with the coleslaw dressing. Season to taste.
  2. Lay the cucumber lengths cut side up on a tray and sprinkle generously with sea salt and refrigerate. After 30 minutes, wash off salt and pat dry with kitchen paper. Cut the cucumbers into shorter 5-8cm pieces and slice thinly lengthways making lots of flexible sticks.
  3. In a large bowl, combine the cucumbers, cabbage, capsicum, spring onion and citrus segments. Drizzle citrus coleslaw dressing over the top and gently toss.
