CRUNCHY CHICKEN NOODLE SALAD WITH LIME MAYONNAISE

TIP: If you are a bit slow with your chopping skills, save time and shred vegetables in the food processor with a blade attachment or on a mandolin.


What You'll Need

  • 1 barbecue chicken (3 cups), flesh shredded
  • ½ Chinese cabbage (wombok), finely shredded
  • 1 red capsicum, seeded, thinly sliced
  • 1 carrot, shredded
  • 4 green onions, thinly sliced
  • ½ cup Praise Whole Egg Mayonnaise
  • ¼ cup lime juice
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon brown sugar
  • 100g packet crunchy Asian noodles
  • 1/3 cup chopped roasted cashews
  • coriander, mint leaves, to serve

What to Do

  1. In a large serving dish combine chicken, cabbage, capsicum, carrot and onion.
  2. In a jug, combine mayonnaise, lime juice, fish sauce, soy sauce and brown sugar. Toss half through salad.
  3. Sprinkle salad with noodles, cashews and herbs.
  4. Drizzle with remaining dressing.
