CRUMBED CHICKEN SALAD WITH SWEET CHILLI MAYONNAISE
What You'll Need
parsley leaves, finely chopped
sea salt and fresh ground black pepper
chicken breasts, sliced
Praise Real Whole Egg Mayonnaise
sweet chilli sauce
baby cos lettuce, washed and chopped roughly
punnet cherry tomatoes, halved
red onion, sliced
eggs, hardboiled, peeled and quartered
What to Do
Preheat oven to 200°C.
Combine breadcrumbs, parsley and salt and pepper in a bowl and crumb chicken pieces by pressing flat.
Place crumbed chicken onto greased tray, drizzle with olive oil and roast until golden.
Combine mayonnaise, sweet chilli sauce and lemon juice in a bowl. Arrange lettuce, tomatoes, onion, eggs and chicken on a platter. Drizzle dressing on top and serve.
