Fresh herbs and our French dressing finish this medley of tomatoes, chorizo and Spanish onion to perfection
What You'll Need
6-8large beefsteak tomatoes (large field tomatoes if unavailable)
1small Spanish onion, sliced
¼ cupchopped flat leaf parsley
2 tbsphand torn basil leaves
3cloves garlic, thinly sliced
¼ cupolive oil
2chorizo sausages, sliced
¼ cupPraise French Dressing
What to Do
Chop the tomatoes roughly and add sliced onion. Season generously with salt and pepper and herbs and toss.
Heat olive oil in a small pot over low to medium heat and add chorizo slices. After a couple of minutes add the garlic watching carefully so it doesn’t burn. Just as the garlic begins to colour remove chorizo and garlic and add to tomatoes.
Add French dressing and a couple of spoons full of the chorizo oil and toss.
