Corn Salsa & Tomato Salsa


What You'll Need

  • CORN SALSA
  • 2 corn cobs, husks & silks removed
  • 2 tbsp Praise Deli Style Classic Aioli 250mL
  • ¼ red onion, finely chopped
  • ½ cup coriander, finely chopped
  • 2 limes, juiced
  • 1 red chilli, finely sliced (optional)
  • TOMATO SALSA
  • 3 ripe tomatoes, diced
  • 1 small red onion, finely diced
  • 4 spring onions, thinly sliced
  • ¼ cup coriander, coarsely chopped
  • ¼ cup Praise Deli Style Chilli & Lime Dressing 250mL

What to Do

  1. CORN SALSA — Heat BBQ grill or a char-grill pan over high heat. Lightly brush corn with olive oil and season. Grill corn, turning occasionally until lightly charred (15-20 minutes). Cool then slice kernels from the cob.
  2. Combine with remaining ingredients in a bowl. Season to taste.
  3. TOMATO SALSA — Combine all ingredients in a bowl and mix.
  4. TO SERVE: Heat BBQ grill or a char-grill pan over high heat. Lightly brush the wraps with olive oil and sprinkle with sea salt. Char-grill until warm and crispy. Slice into triangles.
  5. Break apart the BBQ chicken and slice into finger food size pieces.
  6. Arrange the corn salsa, tomato salsa, wrap triangles and chicken on a plate and serve with lemon and lime wedges.
