CHICKEN PESTO PASTA SALAD WITH FETA, SUNDRIED TOMATOES AND PINE NUTS


What You'll Need

  • 2 chicken breasts, BBQ grilled, sliced
  • 3 tbsp pesto
  • olive oil
  • 1 cup Praise Deli Style Sundried Tomato Mayonnaise
  • 1/2 lemon, juiced
  • 200g spinach leaves
  • 500g penne pasta, cooked al dente
  • 1 cup sundried tomatoes, drained and sliced
  • 1/2 cup Kalamata olives, sliced
  • 1 red capsicum, diced
  • 100g feta cheese
  • 1/2 cup pine nuts, toasted

What to Do

  1. Toss chicken pieces with pesto, splash of olive oil, mayonnaise and lemon juice.
  2. Add spinach, pasta, sundried tomatoes, olives and capsicum and toss again.
  3. Transfer to a serving platter and stir through half the sundried tomato mayonnaise. Top with crumbled feta and pine nuts. Drizzle remaining sundried tomato mayonnaise over the top and serve.
