Chicken, Cucumber, Apple & Dill Salad

A dill mayonnaise pairs well with chicken, cucumber and apple while a sprinkle of cranberries adds the finishing touch to this salad

 

Praise Tip: You can poach your own chicken breasts by covering with water and adding flavours such as bay leaves, garlic, fresh herbs, onion or peppercorns.  Bring to the boil, then cover and simmer for 10-14 minutes.


What You'll Need

  • 200g cooked chicken breast
  • 2 baby cos lettuce
  • 1 large cucumber, peeled and quartered length ways and chopped into large cubes
  • 2 large Granny Smith apples, washed and sliced
  • ¼ cup dried cranberries
  • 1 cup Praise Light Whole Egg Mayonnaise
  • 1 tsp hot water (optional)
  • juice of ½ lemon
  • ¼ cup chopped dill
  • ½ tsp whole grain mustard

What to Do

  1. Slice or shred cooked chicken into bite size pieces.
  2. Combine mayonnaise, lemon juice, dill and mustard in a small bowl. Add hot water if desired (for a thinner mayo) and season to taste.
  3. Arrange baby cos leaves on large platter. Top with cubed cucumber, apple slices and sprinkle over cranberries.
  4. Add chicken and drizzle dressing over the top.
