Chicken Casserole with Mayonnaise

A quick and easy dinner to make with a BBQ chicken or leftover roast chicken.  Try this creamy chicken casserole, it will become a family favourite.

What You'll Need

  • 500g leftover roast chicken, chopped or shredded
  • 1 cup Praise Traditional Creamy Mayonnaise
  • 1 cup celery, sliced
  • 1 cup carrot, sliced
  • 1 cup frozen peas
  • 1 small brown onion, finely diced
  • ½ lemon, juiced
  • ½ cup grated tasty cheese
  • ½ cup panko or plain breadcrumbs
  • ¼ cup grated parmesan cheese
  • ¼ tsp paprika

What to Do

  1. Preheat oven to 220°C.
  2. In a large bowl combine the celery, carrot & frozen peas with diced onion, roast chicken, lemon juice, mayonnaise and tasty cheese. Season with salt and pepper to taste.
  3. Turn the mixture into a casserole dish and smooth with back of large spoon. Sprinkle top with panko/bread crumbs and grated parmesan and a light sprinkle of paprika.
  4. Bake in oven for 12-15 minutes or until top is bubbly and crusty.
