Cherry Tomato & Ham Summer Quiche with Mayonnaise

This creamy quiche uses our mayonnaise in place of cream. The combination of ham, cheese and cherry tomatoes is one the whole family will love.

What You'll Need

  • 5 eggs, lightly beaten
  • ¾ cup Praise Real Whole Egg Mayonnaise
  • ½ cup grated tasty cheddar cheese
  • ¾ cup thinly sliced leg ham
  • 1-2 sheets Pampas shortcrust pastry
  • 1 medium zucchini, coarsely grated
  • ⅓ cup cherry tomatoes, sliced
  • 1 large shallot, thinly sliced
  • 1 clove garlic
  • ½ cup chopped basil or parsley (to serve)

What to Do

  1. Preheat oven to 180°C. Line tin with pastry and bake until golden brown (approx. 15 mins) then remove from oven. Lower oven to 160°C.
  2. Remove excess water from grated zucchini. Heat a fry pan over medium heat, add a little oil, then fry zucchini, garlic and shallots for 2-3 minutes. Add ham and cook until lightly browned. Remove from heat and allow to cool.
  3. In a large bowl place cheese, eggs and mayonnaise and whisk until combined. Season with salt and pepper.
  4. Spread ham mixture into cooked pastry case then gently pour in the egg mixture. Top with sliced cherry tomatoes. Bake for 40 to 45 minutes or until golden and just set. Serve with garnish of chopped parsley or basil, if desired.
