TIP: You can make these fritters using other vegetables including chopped cauliflower, grated carrot or finely sliced onion.

What You'll Need

  • 1 cup self-raising flour
  • 1 cup plain flour
  • ½ cup Praise Deli Style Caramelised Onion Mayonnaise, plus extra to serve
  • 1 teaspoon ground coriander
  • 1 teaspoon cumin seeds
  • 1 cup water
  • 3 cups small cauliflower florets
  • ½ cup chopped coriander, plus extra leaves to serve
  • 1 long red chilli, finely sliced (optional)
  • oil for shallow frying

What to Do

  1. In a large bowl combine flours, Praise Deli Style Caramelised Onion Mayonnaise, coriander and cumin seeds. Mix in water until well combined.
  2. Stir through cauliflower, coriander and chilli through then season.
  3. In a large, deep, frying pan, heat enough oil to shallow fry (1-2 cm) on medium high until a little batter sizzles as soon as it is added.
  4. Working in 4 batches of 5, gently drop tablespoons of mixture into oil. Shallow fry each batch 1-2 minutes, each side, until golden and cooked through. Drain on paper towel.
  5. Serve warm sprinkled with extra coriander and Praise Deli Style Caramelised Onion Mayonnaise for dipping.
