Balsamic Roast Potatoes with Garlic & Thyme

Potatoes roasted in our balsamic and Roasted Garlic vinaigrette make a tasty winter side dish.


What You'll Need

  • 2 kg chat potatoes
  • 1 cup Praise Deli Style Balsamic and Roasted Garlic Vinaigrette
  • 1 bunch fresh thyme
  • 2 whole garlic bulbs, cut in half horizontally

What to Do

  1. Pre heat oven to 200°C.
  2. Place potatoes in a large saucepan. Cover with cold water and bring to the boil. Boil for 12 minutes or until tender (test with a skewer). Drain, cool and cut in half.
  3. Toss the potatoes in roasted garlic dressing and season with sea salt and ground black pepper. Lay out the thyme sprigs in a shallow roasting dish and tip potatoes on top. Nestle garlic bulbs among the potatoes and roast for 10 minutes before shaking up. Continue roasting until nicely caramelised and tender.
