A mixture of pumpkin, beans and chicken marinated in our balsamic dressing, this salad is a complete meal
What You'll Need
1½ kgkipfler potatoes, scrubbed and washed
¼ cupPraise Deli Style Balsamic and Roasted Garlic Vinaigrette
½ cupPraise Traditional Mayonnaise
juice of ½lemon
2avocados, peeled and cubed
100grocket or baby spinach leaves
2Lebanese cucumbers, cubed
250ghot smoked salmon fillet, broken into flaky pieces
What to Do
Place potatoes in a large saucepan. Cover with cold water and bring to the boil. Boil for 12 minutes or until tender (test with a skewer). Drain, cool and cut in half. Heat oven to 200°C. Toss the potatoes in roasted garlic dressing, place on baking tray and roast for 10 minutes before shaking and turning and roasting for further 10 minutes until caramelised and tender.
In a small bowl, whisk together the mayo with lemon juice and add capers and dill. Season to taste.
Arrange spinach or rocket on a platter. Top with potatoes, avocado and cucumber pieces and flake salmon fillet over the top. Drizzle with mayonnaise and serve.
