Preheat oven to 180°C. Line a tray with baking paper smeared with olive oil. Lay the fillets onto oiled paper and season with salt and pepper. Bake for 10 minutes.
Make coleslaw by combining remaining ingredients in a bowl. Refrigerate for 10 minutes before
Remove fillets from oven and squeeze on fresh lemon juice. When cool, gently tear the fillets into smaller chunks and top with coleslaw. Add a splash of Praise Deli Style Coleslaw dressing and mix. Serve while salmon is warm.
