Avocado Stuffed With Prawn Dijonnaise Salsa

These prawn filled avocadoes make a perfect starter with a chilli kick for those who dare!


What You'll Need

  • 1 tbsp extra virgin olive oil
  • juice of 1/2 orange
  • 2 limes
  • 3 tbsp Praise Deli Style Dijonnaise Mayonnaise
  • 1 red chilli, seeds removed and finely diced (optional)
  • 1/2 Spanish onion, finely diced
  • 1 Roma tomato, seeds removed and diced
  • 200g King Prawn Meat
  • 4 ripe Avocados, peeled, cut in half and stone removed
  • chopped chives to garnish

What to Do

  1. In a bowl whisk olive oil, orange juice, juice of 1 lime, dijonnaise, chilli and chopped onion. Check seasoning before adding the diced tomato and prawn meat. Leave to marinate for 30 minutes.
  2. When ready to serve, arrange the peeled avocados on a serving platter or board and squeeze half a lime over. Sprinkle with sea salt.
  3. Squeeze remaining lime in the prawn salsa before spooning into avocado hollows and garnishing with chopped chives.
