Avocado Stuffed With Prawn Dijonnaise Salsa
These prawn filled avocadoes make a perfect starter with a chilli kick for those who dare!
What You'll Need
extra virgin olive oil
juice of 1/2
Praise Deli Style Dijonnaise Mayonnaise
red chilli, seeds removed and finely diced (optional)
Spanish onion, finely diced
Roma tomato, seeds removed and diced
King Prawn Meat
ripe Avocados, peeled, cut in half and stone removed
chopped chives to garnish
What to Do
In a bowl whisk olive oil, orange juice, juice of 1 lime, dijonnaise, chilli and chopped onion. Check seasoning before adding the diced tomato and prawn meat. Leave to marinate for 30 minutes.
When ready to serve, arrange the peeled avocados on a serving platter or board and squeeze half a lime over. Sprinkle with sea salt.
Squeeze remaining lime in the prawn salsa before spooning into avocado hollows and garnishing with chopped chives.
