Apple Walnut Chicken Salad with Apple Cider & Honey Vinaigrette


What You'll Need

  • 400g skinless chicken breast
  • 1 tbsp olive oil
  • 2 tbsp honey
  • 200g mixed leaf salad
  • 2 spring onions, thinly sliced
  • 1 Pink Lady apple, thinly sliced with skin left on
  • 1 Lebanese cucumber, thinly sliced
  • ½ cup Praise Apple Cider and Honey Vinaigrette
  • 100g walnuts, toasted and roughly chopped

What to Do

  1. Heat chargrill frypan or BBQ on medium heat. Slice chicken breast horizontally into four thinner pieces. Coat chicken in olive oil and honey then season with salt and pepper. Grill on each side for 3-4 minutes, remove from heat and cover with foil. Rest for 5 minutes.
  2. In a large bowl, combine mixed salad leaves with spring onion, apple and cucumber. Dress with Praise Apple Cider and Honey Vinaigrette and toss. Slice cooked chicken into strips and add to salad. Garnish with toasted walnut pieces.
